Eating Well Is The Best Revenge


Chicken cutlet with arborio rice cake and carrot topped with sweet and sour beets and roasted broccoli florets. 

Coppola Pinot Grigio to accompany the meal. 

Eating well is the best revenge.

Everything made from scratch.

I imagine an exquisitely delectable dish. However, being a red wine only type I would substitute with a Beaujolais.

RN, Beaujolais would work just as well. Did I mention that I met with the mayor of Fleurie in Beaujolais and have a photo of the two of us shaking hands. Fleurie, followed by Morgon are two of my favorite Beaujolais wines. But to be fair, I enjoy all of them.

I'm not one who's stuck on the idea of white wine with white meat and fish. Whatever you like for wine can go with whatever you're eating.

The exception for me is sweet wine with a meal. That's a no go.

But I also would not recommend something like a Châteauneuf-du-Pape with a fillet of sole dish. Or a sauvignon blanc with a hearty beef stew or prime rib.

But that's just me.

My wife makes this kale salad at least twice a week. Excellent and super healthy.
